Winemaking of Quinta Vale Dona Maria Vinha da Francisca Tinto: All the grapes are hand-picked, carefully selected on the sorting table and destemmed before entering the granite lagares. All the grapes are trodden in lagares and then ferment for 7 to 10 days at temperatures of 22º to 27ºC in the lagares or in stainless steel tanks with manual pump-overs. The wines are racked into new French oak barrels of 225L where malolactic fermentation takes place.
