The harvest is done manually, with hand selection of the grape clusters. The berries are destemmed and gently crushed. Traditional granite lagares with foot treading were used as fermentation tanks. Subsequently, the wine aged in French oak barrels for at least 18 months. All wines are sealed with natural cork. Not being filtered or cold stabilized, these wines may develop sediment with age.
