Winemaking of the Prohibited Wine À Capela Red 2020: After hand harvesting and transport to the cellar in small boxes (18kg-20kg), the grape clusters were hand-destemmed and the grapes were foot-trodden in a small press. The fermentation started spontaneously and lasted approximately 20 days. It was racked into a jar without the use of electricity.
