Vinification: Hand-picked at their optimal point, the grapes are destemmed and vinified according to a process that relies on careful maceration with the extraction of color, tannins, and aromas from the skins, complemented by constant pump-overs during fermentation. This takes place in lagares, at a controlled temperature between 28-30ºC, until the desired Baumé degree is reached. At this stage, the addition of grape brandy (fortification) occurs, resulting in a fortified wine. A wine of exceptional quality, coming from a single harvest, and must be bottled between the second and third year after the harvest. An originally rich, complex, full-bodied wine, with remarkable aging potential.
