Winemaking of Monte Meão Vineyard of the New Red Wine: After crushing, the grapes undergo a thermal shock, followed by foot treading for four hours in granite vats. After this process, the grapes are transferred to wooden vats, where they ferment for about 10 days. The aging takes place over 15 months in used 225-liter barrels of French oak.
