Vinification of Vallado Red Magnum Wine: About 80% of the grapes come from vineyards planted in the 1990s and 20% from old vines aged between 60 and 100 years. The grapes are vinified in stainless steel tanks with capacities of 5 and 10 tons, fully destemmed. The must ferments for about a week at 23º-25ºC with programmed automatic pumping over. Aging: about 70% of the wine ages for 16 months in stainless steel tanks and the remainder in 225 lt French oak barrels of 3rd and 4th year.
