Vinification of Carm CM red: Destemming, gentle crushing and thermal shock, followed by cold pre-fermentation maceration in a lagar for 12-24 hours. Fermentation in low wide tanks for 10 days at 24-26ºC. Malolactic fermentation completed in wooden barrels. Aging in stainless steel and American/French barrels.
