Winemaking of Vale Dona Maria Vinhas do Sabor Red Wine: All grapes are handpicked, carefully selected on the sorting table, and destemmed before entering the granite lagares. All grapes are foot-trodden in lagares and then ferment for 7 to 10 days at temperatures of 22º to 27ºC in stainless steel tanks with manual punch-downs. The wines are racked into second and third use 225L French oak barrels where malolactic fermentation takes place.
