Vinification of Titan Wine Clay Stage Red 2019: Fresh grapes at their ideal ripeness, handpicked into 20 kg boxes, are transported to the winery where they undergo a careful manual selection, destemming, and foot crushing in a granite lagar, where two-thirds of the fermentation takes place, with the last third and the following 16 months of aging in small clay amphorae, where through their porosity there is a slow mechanism of wine concentration.
