«After a careful selection for their best condition, the grapes were harvested into 25 kg bins and sent to the wine production center, where they were fully destemmed. Fermentation took place over 9 days in traditional 7-ton granite tanks with foot treading and gentle pumping over for the leaching of skins and extraction of phenolic and aromatic compounds. At the end of alcoholic fermentation, the wine was transferred to second-year French oak barrels, where malolactic fermentation occurred and it was aged for about 18 months.»
