Winemaking of Quinta do Monte Xisto Wine The grapes were hand-harvested in early September and transported to the winery in 20kg boxes. They were vinified in lagares with foot treading. Fermentation took place over 6 days in the lagar with indigenous yeasts. This was followed by an 18-month aging in 600-liter barrels.
