Vinification of the Limestone 3 from the Main Red: Manual harvest with selection on a sorting belt at the winery entrance. This is followed by destemming and crushing, with the result transferred to stainless steel tanks with controlled temperature for alcoholic and malolactic fermentation. Maceration for about 20 days, using the delestage technique. The wine ages for 24 to 30 months in used 225-liter French oak barrels. It then ages for another 6 years in the bottle before being released to the market.
