Tori, meaning ‘bird’, is a limited edition British sake. It’s produced once a year, in a single tank from Yamada Nishiki rice (sourced from Hyogo, Japan – polishing 45%) and brewed slowly at a very low temperature with MEIRI Japanese sake yeast to harness more delicate flavours.
