This wine combines its quality with the name of the Carthusian monks, who since 1587 have led a solitary life of prayer at the Convent of Santa Maria Scala Coeli, in Évora. It was first produced in 1986. Vinification of Cartuxa DOC White Wine 2021: when the grapes reach the ideal ripeness, they are harvested and transported to the cellar, where the technological process begins with total destemming and slight crushing, pressing, cooling, and must clarification. Fermentation takes place in stainless steel vats at a controlled temperature of 16ºC. This is followed by aging on fine lees for 8 months with regular stirring.
